where can I find legacy documentation on how to upgrade an EVE-NG Pro cluster from 4.x to 5.x?

No, you are too late.
Because EVE V4 was based on Ubuntu 18 which is end of live even.
the NEW EVE is V6 Ubuntu 22.04
Your option is to do backup your EVE V4 and install fresh new EVE V6
