Actually I have this same NUC. The kernel with a new e1000 driver that supports
it was backported to ubuntu 16 a while back (16.04.06 has it). So depending on
how much time the devs have (and how much they've devoted to porting to
18.04.x) they can either compile the new driver or use 18.04.x
In my case I imply solved it with a USB NIC and made a report in the help
board. There are a number of supported USB Gbps and 100 Mbps NICs.
I'm definitely going to try and compile a new e1000 driver for this kernel and
see if that works. However, it's something that I'd definitely not recommend
users do. Very easy to seriously break your install.
Best to wait for next update with new kernel and use a USB NIC for now. If you
follow the bare-metal instructions well your first detected NIC will always be
eth0
